On the nose, it's fruity and floral, with notes of white peach, mango, and especially grapefruit; the white flowers evoke orange blossom, while the yellow elderflowers recall broom.

Perfect with Sicilian fish pasta, excellent with shrimp, sardines, and fish couscous.

Vastedda del Belice cheese, ricotta, Aeolian salad, fish tartare for an aperitif. Grilled red prawns, sardines a beccafico, Sicilian-style stuffed squid, sardine timbale.

Vinificazione

To minimize oxidation, the process begins with destemming and crushing, followed by a soft pressing in the presence of inert gas, and static sedimentation at low temperature.

After inoculation with selected yeasts, the must ferments at a temperature of 17°C – 18°C. The wine then ages in stainless steel tanks, with fine lees stirred weekly for 4 months. This is followed by bottling.

Aphor denotes the foam from which, it is said, the goddess was born from the sea.

This scene is transferred onto the label, depicting on one side the sea itself, producing "fertile" foam at its edge, and on the other, the goddess, elegant and statuesque in her beauty, a product of that very foam.
