Vinificazione

The process begins with destemming and crushing, followed by a soft pressing with inert gas and static sedimentation at a low temperature.

After inoculation with selected yeasts, the must ferments at a temperature of 15°C – 16°C. The wine undergoes a secondary fermentation using the Charmat or Martinotti method for about 18 days, after which it is bottled using the isobaric method.

The southern wind

Australis comes from Latin, meaning "austral," "southern," "midday wind," "south wind." It represents the Ostro, a cardinal wind.

Contrada Valso is fully exposed to this wind, which, being a warm wind, is reflected in the orange color of the label to evoke its warmth.
