On the palate, we immediately notice the freshness of the Catarratto, its medium body, savory and mineral notes, and a slightly bitter finish characteristic of Alcamo's flagship grape variety.

A wine to enjoy with sardines, shrimp, octopus ragu, busiate pasta, Trapanese pesto, or swordfish and eggplant with Pachino cherry tomatoes, and also with pasta with fava bean purée, or tenerumi (zucchini leaves) and mussels.

Vinificazione

The winemaking process begins with destemming and crushing, followed by a soft pressing with inert gas, and static sedimentation at a low temperature.  

After inoculation with selected yeasts, the must ferments at a temperature of 18°C – 19°C. The wine then ages in stainless steel tanks, with the fine lees stirred weekly for 2 months. Bottling then follows.
