Vinification

It starts with destemming and crushing, followed by a gentle pressing, with the presence of inert gas and static sedimentation at low temperature.

After the inoculation of selected yeasts, the must ferments at a temperature of 15°C – 16°C.

The wine undergoes refermentation using the Charmat or Martinotti method for approximately 18 days, after which it is bottled using the isobaric method.

The southern wind

Australis comes from Latin, australe, meaning southern, wind from the south. It represents the Ostro, a cardinal wind. Contrada Valso is fully exposed to this wind, which being a warm wind, is reflected in the orange of the label to evoke its warmth.
