White meats, sausage with wild fennel, involtini (meat rolls), are the beginning of a Sicilian barbecue.

Winemaking

After destemming and crushing, yeast inoculation is carried out.

The grapes ferment in steel tanks with the skins for 15 days at a temperature of about 22°C – 23°C.

Then the wine is drawn off, and the obtained wine undergoes malolactic fermentation in steel, a process that adds smoothness.

Bottling begins in March, followed by bottle aging for at least three months.
