Nero d'Avola - Sicilia D.O.C.

Vinification

After destemming and crushing, the yeast inoculation takes place. The grapes ferment in stainless steel tanks with the skins for 15 days at a temperature of approximately 22°C – 23°C.

Then, the wine is racked off the skins, and the obtained wine undergoes malolactic fermentation in stainless steel, adding smoothness to the final product.

Bottling begins in March, followed by bottle aging for a minimum of three months.
