Catarratto

Pale straw yellow with greenish reflections. The fruity and floral bouquet, with hints of white flowers such as orange blossom, lemon zest, bitter orange, and a touch of tropical fruits, is complemented by a spicy and mineral finish.

Pairings

A wine to be enjoyed with sardines, prawns, octopus ragù, busiate pasta, Trapanese pesto, or swordfish and eggplant with cherry tomatoes. It also pairs well with pasta al macco di fave (fava bean puree), or with tender shoots of the cucuzza squash and mussels.

Vinification

In reduction, we start with the destemming-crushing, we proceed with a soft pressing, with the presence of inert gas and a static sedimentation at low temperature.

After the inoculation of the selected yeasts, the must ferments at a temperature of 17 ° C – 18 ° C.

The wine is aged in steel tanks, with the fine lees that will be moved weekly for 4 months. It continues with the bottling.
